Linguine and Shrimps

Shrimps are an excellent source of protein and omega-3, however, they are also high in cholesterol so you should maybe only eat them once a week.

Ingredients (serves 2)
12 oz. 26-30 size shrimp, peeled and deveined
¼ cup olive oil
1 tsp garlic, minced
2 tbsp shallots, finely diced
½ cup fresh tomatoes, roughly chopped
½ cup dry white wine
¼ cup lemon juice
2 tbsp fresh chopped parsley
4 cups cooked linguine

Method
Cook the linguine as instructed on the packet, drain and set to one side. Sauté the shrimp in the oil in a large skillet over a medium heat for approximately three minutes, turning regularly to ensure even cooking. Remove the shrimps and set to one side, add the shallots, tomatoes and minced garlic to the skillet and cook until the shallots start to color then add the white wine and lemon juice and bring to the boil. Add the shrimp, linguine and parsley to the skillet and cook until everything is hot and serve.
