Ground Turkey Shepherd’s Pie

Shepherd’s pie is usually made with lamb, but this healthier version uses ground turkey instead which is naturally lower in fat and a great source of protein.

Ingredients (serves 6)
2 tbsp olive oil
1¼ pound ground turkey
3/4 cup onion, diced
2 cloves garlic, minced
2 tbsp flour
½ cup reduced-sodium chicken stock
½ cup rice milk
2 tbsp chopped fresh parsley
2 cups prepared mashed potatoes
¼ tsp paprika

Method
Preheat oven to 400ºF and grease a 9-inch x 9-inch baking dish. Over medium heat, sauté the onions and garlic in the oil in a large skillet until they slightly color and then add the ground turkey to brown. Drain the juices from the skillet and then add the broth and rice milk. Bring the mixture to a boil and then lower the heat to simmer gently for a couple of minutes. Remove from the heat and add the parsley. Pour the mixture into the baking dish and then distribute the mashed potatoes evenly over the top. Sprinkle with the paprika and bake in the oven for 25 to 30 minutes. Serve with vegetables of your choice.
