Oven-Cooked Salmon Fillets
Salmon is easy to digest and a great source of omega-3 and protein. You can pour your favorite sauce over this or serve as it is with noodles, rice, potatoes or stir-fried vegetables.
Ingredients (serves 4)
4 salmon fillets, boned
½ tbsp oil
2 tbsp white wine or fish broth
1 medium shallot finely chopped
salt and pepper to season
Method
Preheat your oven to 425°F. Coat a large pie pan or baking dish with oil. Place the salmon fillets skin side down into the oiled dish and pour over the wine or fish broth, sprinkle with the chopped shallots and season. Cover the dish with foil and bake in the oven for 15 to 20 minutes or until the fish starts to gently flake and is opaque in the middle. Transfer the salmon to warmed plates and pour over the juices in the pan.
